The Messy Kitchen’s Go-To Snack: Chunky Corn and Black Bean Salsa
Dinner is taking longer than you expected. You forgot to chill the dough, the soup just won’t seem to reduce, and why can’t the dang onions just dice themselves?! You’re hungry… no you’re hangry! And your guests are going to be drunk before dinner starts if you don’t get something on the table besides the wine. We’ve all been there. Luckily, I came up with a solution.
The easier salsa ever! And this chunky black bean and corn salsa also happens to be a total crowd pleaser. There are only three required ingredients:
Black beans, canned corn and diced tomato, all of which we buy in bulk at Costco and you can get at your local corner store in a pinch. From there, you can customize a good deal using the spices you have on hand. Have some jalepenos? Throw ’em in! Like things a little less spicy? Leave out the cayenne and chili peppers. It can be customized to meet your fancy! Really, I do this all by taste each time I make it, but this will give you an idea of how to make the perfect salsa on the fly! It’s fool proof, and you can do it in three minutes with just the ingredients in your panty.
Ingredients:
- 1 can black beans, rinsed and drained
- 1 can corn, rinsed and drained
- 1 can diced tomatoes, drained just slightly
- 1 tbsp lime juice
- 1 tbsp chili powder
- 1 tbsp cumin
- 1 tsp smoked paprika
- 1/4 tsp cayenne powder
- 1 chili in adobo sauce + 1 tbsp adobo sauce
- Sea salt, to taste
Instructions: Combine all ingredients and serve with chips!
