Tahini & Date Milkshake {Vegan}
This holiday weekend has been about balance. After a fun night out on Friday, Saturday was spent on cleaning and (unfinished) home improvement projects. Yesterday we got up just after 6:00am so I could run my first half marathon of the year. It was slow (1:50:20) and exceedingly painful, but I’m glad I got one in before the Spring season is over. We rewarded ourselves by lounging by the pool drinking pitchers of mimosas before heading to Saint Michael to catch the sunset on a friend’s boat and heading into town for dinner and dancing. And today? Well, today is about recovery and homework. As we speak, I’m sitting in the backyard enjoying the breeze in a just-sunny-enough spot, putting off the three chapters I need to read by telling you about my weekend. And milkshakes, we need to talk about milkshakes. I made the most amazing milkshake recently, perfectly sweetened with dates and banana with the creamy tang of tahini. It was incredibly rich and satisfying, and while I surely could have drank the entire thing myself, my mama taught me that it was nice to share.
Tahini & Date Milkshake
Adapted from Cookie & Kate
Ingredients:
- 1 cup almond milk, or milk of choice
- 4 dates, pitted
- 2 frozen bananas
- 1 tsp vanilla extract
- 2 tbsp tahini
- Sprinkle of cinnamon
- Handful of ice
Instructions: Combine all ingredients in a blender and blend until smooth!
Makes 2 small, rich shakes

would you recommend this for lunch
It might not be enough for lunch. I would think it more fit as a light breakfast or hardy snack.
