Skinny Lime Shrimp & Avocado Salad
The last recipe I brought you was quite complicated. This one is not! In fact, this is different from that recipe in just about every way possible. This isn’t a dessert laden in bacon, chocolate and booze, but instead a light lunch option low in calories and carbohydrates. Because sometimes you have to offset bourbon bacon chocolate pie with something healthy. It’s all about balance!
Lime Shrimp & Avocado Salad

Ingredients:
- 1/4 cup chopped red onion
- 2 limes, juice of
- 1 tsp olive oil
- 1/4 tsp kosher salt, black pepper to taste
- 1 tsp cumin (optional)
- 1 lb jumbo cooked, peeled shrimp
- 1 medium tomato, diced
- 1 medium hass avocado, diced
- 1 jalapeno, seeds removed, diced fine
- 1 tbsp chopped cilantro
- In a small bowl combine red onion, lime juice, olive oil, cumin, salt and pepper. Let them marinate at least 5 minutes to mellow the flavor of the onion.
- In a large bowl combine chopped shrimp, avocado, tomato, jalapeño. Combine all the ingredients together, add cilantro and gently toss. Adjust salt and pepper to taste.
- Serve over mixed greens with a boiled egg for extra protein, if desired!
