Why send a thank you card when you can host a thank you brunch?
When my Grandad passed a week before Christmas, I was set to be on a plane later that evening. I really wanted Courtney with me and the family, but we didn’t have dog care arranged until the following week. The prospect of him staying behind made me really sad, so he decided to send an e-mail to some of our friends to see who might be able to help out. Within hours, we had a full spreadsheet with a dog care schedule worked out through the holidays. I felt immensely lucky to have so many of our friends volunteer to help us out during a tough time, and I really wanted a way to thank them. Since cooking tends to be my go-to way to show people I care, I decided that was the way to go!
Also, don’t tell anyone, but it’s kind of a win-win for me too, because I get all these beautiful faces around my table! I was mildly lamenting as we were setting up that our table always feels too small, but afterwards it struck me: always feeling like your table is too small means we have a whole lot to be thankful for (and we are!)
Here’s a preview of the menu, a few old favorites and a couple new recipes! Ironically, this Asparagus, Pesto and Goat Cheese Quiche with Quinoa Crust which I’ve made very successfully several times now came out quite ugly (hence no photo). Not wanting that to be folk’s only savory option, I ad libbed a sweet potato crusted quiche and ended up really liking it! Going to try to remember what I did and post that recipe for future brunches!
