Savory Cake and Zombie Prom

Saturday night, I went to my very first prom.  That’s right, I never went to prom in high school.  Apparently boys found me scary, or I believe the word I heard most often was “intimidating”.

Anyways, this particular Prom was a celebration of our fabulously undead friends Eric and Kelly.

And they know how to throw a party.  I’m not sure that this much fun is even legal.

Since the Prom King isn’t big on sweets, his birthday cake was a savory smoked salmon cake.

Basically a bunch of sandwiches layered on top of each other and covered with cream cheese.  Seriously, how do you go wrong with that?

Savory Smoked Salmon Cake with Dill Cream Cheese Frosting

Ingredients:

  • 1 loaf of pumpernickel bread
  • 18oz cream cheese, softened
  • 1/4 cup sour cream
  • 1 1/2 Tablespoon lemon juice
  • 2 Tablespoon each fresh dill and chives, pl
  • 1 Tablespoon capers
  • 3/4 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 12 oz smoked salmon
  • 1-2 cucumbers, sliced into 1/8 inch circles

Instructions:

  1. In a food processor, combine cream cheese and sour cream until smooth.  Add lemon, capers, dill, chives, salt and pepper and combine.
  2. Cut the crusts off of your bread and place 2-3 slices side by side on your serving plate.  This will depend on the size of your loaf.  My loaf was small, so I used three slices, but with a larger loaf you may only want to use two.  If there are gaps in the bread, you can cut out pieces from an extra piece of bread and fill them in.

  3. Top with a thin layer of cream cheese spread.

  4. Next top with a layer of thinly sliced cucumber

  5. Followed by a layer of smoked salmon.

  6. Spread a thin layer of cream cheese mixture on top and bottom of the next layer of bread, and place on top.

  7. Repeat with remaining layers, essential creating a stack of sandwiches.

  8. Frost the top and sizes with the remaining cream cheese mixture.  Now it’s time to decorate!  Arrange cucumbers around the sides and shape salmon into little roses.  You may also want to use additional dill, chives and lemon slices to decorate your cake and platter.
