Directions
Last week we finally bit the bullet and went to a financial planner. I was forthright about the fact that I’m in the non-profit world and probably won’t be making more money any time soon (read: ever) + we like to travel and buy clothes and toys… but I’d love to be making wise decisions about the assets we do have. Plus, it seemed like the grown up thing to do – and occasionally we do that.
Case not in point: filling out the forms before our meeting.

Are there any special considerations with any of your children that might affect your financial situation? They have a life expectancy of 12-14 and will likely be dependent on us their entire lives. They do not plan to attend college and bring in no income.
I’m confident that our financial planner didn’t think that was as funny as we did – but I’m sure he found it very funny. How can you not?
Anyways, what the heck does this have to do with garam masala carrots? Well, on the way home we stopped at Frankly… Pizza! in Kensington, which we’ve been meaning to try since seeing the documentary New Chefs on the Block. We already know that Aaron Silverman makes awesome food, but Frank and his wife Kate were really the stars of the film and I wanted to taste the sheer amount of love they put into their food.
We ordered a margarita and bacon and egg pizza to split, two beers – which we put a great deal of thought (and sampling) into selecting, and the salad of the day – an afterthought.
Clearly we hated it (for those of you who think we actually have two horribly disabled children, this is sarcasm).
Anyways, the salad of the day – a garam masala and carrot something or other – was such an after thought I didn’t even take a photo. But we both loved it. And then I couldn’t stop thinking about it!
I knew I had to recreate something similar, so when Mother’s Day rolled around, I decided to make garam masala honey roasted carrots (topped with pistachios and mint!) – and once again, I thought they were the unexpected stars of the show!

Preheat oven to 425° F and line a baking sheet with parchment paper. |

In a large bowl whisk together the honey, oil, garlic, garam masala, salt and pepper. Toss the carrots in the mixture until they're coated then place them in a single layer on the prepared baking sheet. Sprinkle with a little more salt and pepper. |

Roast the carrots for approximately 20 minutes or until they are tender, but not mushy. Rotate the baking sheet halfway through the cooking time. |

Place the carrots on a serving plate and top them with chopped pistachios and mint. |
