Quinoa Pudding Breakfast Parfait
Another delicious, quick and healthy breakfast option!
- 1/3 cup cook quinoa
- 1 container (5.3 oz) vanilla or honey flavored Greek yogurt
- 2 tbsp light coconut milk
- 1/2 cup fresh berries
- 1/2 tsp vanilla extract
- 1 tsp cinnamon
- sweetener of choice (I used 2 tablespoons sugar free syrup)
Combine all the ingredients in a bowl, except for the berries. Layer or top with fresh berries. Enjoy a delicious breakfast and still make it to work on time!
