Paleo Summer Squash Fritters
These summer squash fritters were somewhat of a happy accident. Perhaps not the recipe itself, but that they came to be in the first place. I’d planned to make shredded sweet potato hash browns to serve with our burgers, but when I went to fetch the sweet potato I found that they had seen much, much better days (food waste, NEJ!!!) Regardless, I had numerous Pattypan squashes in my fridge that I hadn’t quite decided what to do with. Since they were a bit small to stuff, we decided to shred them and make these fritters.
They were awesome with our burgers, but how I’ve really been enjoying them is for breakfast, topped with a fried egg and served with a side of chicken sausage. Now that’s a big girl breakfast right there.
The other great things about these fritters is that you can use any type of Summer squash you happen to have on hand! Adaptable recipes are my jam.
Paleo Summer Squash Fritters
- 2 large summer squash*
- 1 teaspoon sea salt
- 2 scallions, very thinly sliced
- 1 large egg, lightly beaten
- ½ cup almond flour
- ½ teaspoon baking powder
- 2 tablespoon nutritional yeast
- 1 tablespoon cumin
- 1 tsp onion powder
- Ground pepper, to taste
- Olive oil – optional**
*You can use Pattypan, Zucchini or Yellow Squash)
**You can pan fry these in a couple of tablespoons of oil or just spray the pan with cooking spray. The former will be crispier but the latter will cut down on fat. Both will work just fine.
- Shred the squash into a large bowl using a medium sized grater. Wrap in a cheese cloth or clean dishtowel and wring to remove as much water as possible. Return to the bowl.
- Add the remaining ingredients (except olive oil) and mix well.
- Use your hands to form into balls and flatten into patties.
- Heat a large skillet over medium-heat. Either coat with cooking spray or add a splash of olive oil. I usually use cooking spray to cut down on added fat, but these are definitely crispier if you go the oil route. This is up to you!
- Cook on each side for about 2 minutes, or until golden brown.
Makes 8 patties
