Paleo Chocolate Crock Pot Chili {Whole30}

“There’s no way this is compliant.”  Those were the first words Courtney said after his first bite of this chili.  Well, as it always pains me so to admit, he was wrong.

When it comes to chili, there are two camps: beans or no beans.  I personally am a beans in my chili kinda gal (Texans, calm down).  In fact, I’d probably choose a vegetarian chili with beans than a meat chili without them (okay, now I’m sure I’ve offended chili connoisseurs from all over).  Well, fortunately for the haters, the Whole30 is on your side.   So here is a beanless chili, a rare occurrence here in the Messy Kitchen.  But it has chocolate, so we’ll call it a compromise!

Paleo Chocolate Crock Pot Chili

From Key Ingredient

IMG_5270Prep time: 20 minutes  Cook time: 6-8 hour

Ingredients:

  • 2 lbs lean ground beef
  • 1 Tbsp olive oil
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 4 stalks celery, chopped
  • 1 bell pepper, diced
  • 1 14 oz can diced tomatoes
  • 1 8 oz can tomato paste
  • 1/4 cup cocoa or cacao powder
  • 3-5 dried chipotle peppers
  • 1 Tbsp cumin
  • 1 Tbsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp salt

Instructions:

  1. Heat olive oil in a large skillet over medium heat.  Add garlic and onion and sauté until tender
  2. Add the ground beef and cook just long enough to brown most of the meat Once browned, add entire mixture to the crock pot.
  3. Add the celery, bell pepper, diced tomatoes, tomato paste, cacao powder, chipotle peppers and spices. IMG_5250
  4. Stir all ingredients well and set Crock-Pot to low and cook for 6-8 hours, stirring occasionally.

Serves 6-8
