Overnight Chia Oats with Almond Butter and Fresh Berries
These oats are so pretty to look at that I started putting this post together last night and decided to make a batch for this morning. Which I am eating as I type. I did this while so full from Thai-Xing that I literally had difficulty breathing, let alone thinking about food. Yet I still wanted to think about these oats.
Overnight Chia Oats with Almond Butter and Fresh Berries
A Messy Kitchen Original
I take all of my photos in the exact same spot on my back patio, as you’ve probably noticed that. So have my neighbors. “There’s that weird girl outside taking photos of her pancakes again, in gym shorts and no shoes.” What can I say, you just can’t beat natural light!
Ingredients:
- 1/2 cup oats
- 1 T chia seeds
- 1 cup water
- 1 tsp vanilla extract
- Dash of cinnamon
- 1/4 cup almond milk
- 1/2 cup fresh berries
- 1 T almond butter
- Sweetener of choice
Directions:
- In a microwave save jar or Pyrex cup, combined oats, chia seeds and water. Cook for 2-3 minutes, keeping an eye on it to make sure it doesn’t overflow (huge mess alert!) Allow to cool for a couple of minutes and refrigerate over night.
- Lay your head down on your pillow and dream of porridgy delicious oats.
- Combine oat mixture, almond milk, vanilla, cinnamon and sweetener in a blender and pulse several times. Transfer to a bowl, careful not to leave any of that beautiful deliciousness behind!
- Top with fresh berries and almond butter and chow down!
