Jamaican Style Greens (Swiss Chard with Bacon)
When I got another bunch of Swiss chard in my CSA bag this week, I summoned all my willpower and refrained from making one of my all time favorites again and decided to seek out another delicious way to prepare the chard. When I came across these Jamaican style greens, I thought they not only looked delicious but would make an awesome side for the Chipotle-Glazed Roast Chicken I had all the ingredients on hand for.
These dishes paired wonderfully for a healthy Paleo meal with just the right kick!
Jamaican Style Greens with Bacon
Inspired by Immaculate Bites
Ingredients:
- 1 medium bunch of fresh chard
- 2 thick bacon strips cut in pieces
- 3-4 garlic cloves minced
- 1 medium yellow onion, diced
- ½ teaspoon smoked paprika
- 1 tsp dried fresh thyme
- 1 cup diced tomato
- Salt and pepper to taste
Instructions:
- Cook bacon until crispy in a large cast-iron skillet or saucepan. Remove the bacon and set aside.
- Cook the diced onion and garlic in the bacon grease until soft. Add tomatoes, paprika and thyme and cook for a few more minutes.
- Meanwhile, rip the collards into pieces. Remove any large stems, but keep the small ones, they’ll cook down. Chop the bacon into small pieces.
- Add collards to the veggie mix and add salt and pepper to taste. Mix well, add a tiny bit of water and cover, allowing to steam for 3-4 minutes or until the leaves are tender. Stir in the bacon.
Serves 2 as a side
