A Healthy Lunch Break: Buffalo Turkey Quesadillas
While I’m otherwise a faithful brown-bagger, there are usually a couple of days a week when I have enough time to go home during my lunch break and make myself something hot. When I do, these quesadillas are often what I make. Other than the turkey, mozzarella and Frank’s, what goes in them and on them varies widely based on what I have in the fridge. They certainly aren’t rocket science, but they have become a lunchtime favorite so I thought it was about time I share.
Buffalo Turkey Quesadillas
Ingredients:
- 2 low carb tortillas (Trader Joe’s are my favorite!)
- 1-2 oz light mozzarella (again, Trader Joe’s!)
- 4oz ground turkey
- Frank’s Red Hot
- Lettuce and tomato to garnish
- Other veggies, as desired
Instructions:
- Cook the turkey in a skillet with chili powder and chipotle peppers in adobo sauce if you like spice. I do this in advance and store cooked turkey until I’m ready to make my quesadillas.
- Place tortillas on skillet or griddle that you’ve greased with cooking spray. Heat over medium-high heat for a few minutes before adding turkey to one side and mozzarella to the other. You can also add any additional veggies in at this point.
- Once the cheese has melted, fold the quesadillas over. Allow tortilla to get golden brown before flipping and allowing the other side to do the same.
- Slice using a sharp knife and top with lettuce, tomato, Frank’s and any other desired toppings!

*This assumes you used the Trader Joe’s products I mentioned, 1.5oz of cheese, and 93/7 ground turkey. No it’s not as lean as it comes, but it’s what comes in bulk at Costco!
