Have Your Abs and Eat Cake Too: Cake Batter Protein Pancakes
Wanting to get a little more protein in my usually oat-heavy breakfast life, I recently bought some cake batter flavored Muscle Milk protein powder. The first thing on my agenda was these protein pancakes. When I posted photos of this delicious creation, there was immediate demand for the recipe. And I can’t say that I’m shocked. I mean, if there is anything better than cake for breakfast, it’s cake that will only cost you about 300 calories, all while packing in a 25 gram protein punch. Yeah, I didn’t really believe it either. And that’s not for a skimpy little pancake. It’s for this huge plate of pancakes. So there you have it, you can have your abs and eat cake too!
Cake Batter Protein Pancakes
- 1/4 cup pancake mix or flour of choice (I used 1/4 cup Wild Roots Ancient Grain Pancake and waffle mix, which is gluten-free and can be found at Costco)
- 1/4 cup cake batter Muscle Milk protein powder, or protein powder of choice
- 3 egg whites
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1 tsp vanilla extract
- 1/4 cup milk of choice (I used almond)
- Dash of Cinnamon
- Optional: rainbow sprinkles, whipped cream to garnish
Mix all ingredients thoroughly. Spray pan and heat over medium heat. Spoon about 1/4 cup patter at a time (this will make about four large pancakes – you can certainly make smaller pancakes if you prefer). Once the batter begins to bubble, flip and allow other side to cook. These cook very quickly. Garnish as desired.
Makes 1 very large serving (the serving pictured is actually missing one pancake, which I ate while cooking the rest)
