BBQ Pulled Pork Stuffed Sweet Potato {Whole30}

This was dinner on the first night of Whole30.  I wanted to make something extra yummy for the first night so that Courtney, and more importantly I, would be sold on this paleo thing.  These babies did the trick.  Plus, they’re super easy to make once you’ve prepared the pulled pork!  They’re also great for a crowd: if you use the entire batch of pulled pork, you can easily make eight stuffed sweet potatoes!

Wrap baked potatoes in foil and bake at 425F for 45 minutes – 1 hour or until soft, turning once.  If you are using leftover pork, heat it up in the microwave.  Once cool enough to handle, make a slit in the sweet potatoes lengthwise and using a fork, create a hole in the center.  Fill each sweet potato with about 3/4 cup pulled pork and top with avocado!
