Balsamic Glazed Steak Rolls
Sometimes you just want some sautéed vegetables for dinner. Wrapped with steak. Sorry my veggie friends, this recipe is not for you. Although you kind of want it, don’t you? This is the kind of steak dish that can seduce a vegetarian. Trust me, I have this from an inside source. But I never reveal my sources.
This is a great dish for when you want to look all fancy pants without putting in too much work (and when isn’t this the case?). It’s great for a dinner party, or served cold as the main course at a 2,500 person flash mob picnic, dressed all in white. Just be careful not to spill the marinade on your dress, that shit stains (also from an inside source, but like I said… I never reveal my sources).
Balsamic Glazed Steak Rolls
Adapted from Picture the Recipe
For the Steak:
- 1.5 lbs flank stead
- Salt & Pepper
- 3 tbsp Worcestershire sauce
Roll the steak until quite thin and cut into 3″ strips. Sprinkle with salt and pepper and cover with worcestershire and let marinate for 30 minutes or up to several hours.
For the Veggies:
- shredded carrots
- 1 bell pepper
- 1/2 zucchini
- 3 cloves garlic, minced
- 1 tsp oregano
- 1 tbsp olive oil
- Salt & Pepper, to taste
While the steak is marinating, prepare the veggies by cutting into matchstick slices. Heat a medium skillet with olive oil. Add garlic and cook for a minute or so. Add the rest of the veggies and cook until soft. Set aside.
For the Balsamic Glaze:
- 2 tsp butter
- 2 tbsp thinly sliced green onions
- 1/4 cup balsamic vinegar
- 2 tbsp brown sugar
- 1/4 cup chicken, veggie or beef broth
- Fresh sage, minced
Melt butter in a small sauce pan. Add green onions and sage and cook for cook for a minute, careful not to burn. Add vinegar, sugar and brown and bring to a boil. Lower to a simmer and cook until reduced by about half.
To Assemble:
Lay out steaks. Place the veggies in the middle and roll up the steaks, securing with a toothpick. Heat a cast iron skillet and cook steak on each side until desired level of doneness. Spoon balsamic glaze over steak rolls.
