Bacon Wrapped Stuffing Bites
I have so many recipes to share with you! What do you want first, the vegan or the bacon?
Mmm, yeah, that was an easy question. This is the only photo I got of these bacon wrapped stuffing bites. Wanna know why? They got eaten that fast. These are a great Friendsgiving appetizer, or alternatively an amazing way to use up leftover stuffing! If you’re doing the latter, the instructions are quite simple: Roll stuffing into balls. Wrap in Bacon. Bake!

Bacon-Wrapped Stuffing Bites
Ingredients:
- 1 14 oz packet cornbread stuffing mix
- 2 large eggs
- 1/3 cup milk
- 3/4 cup chopped white onion
- 3 cloves garlic, minced
- 1/2 apple chopped
- 1 cup chopped pecans
- 1 lb Italian sausage links, casings removed and torn into chunks
- 1 teaspoon curry powder
- 1 teaspoon lemon zest
- 18 slices bacon, cut in half
- Toothpicks
Directions:
- Preheat oven to 350°F.
- In a large mixing bowl, combine stuffing mix, egg and milk and mix well.
- Add the onion, garlic, parsley, apple and pecans. Mix to combine.
- Add the torn sausage, curry powder and lemon zest. Mix again and taste it (just kidding! Don’t do that!)
- Arrange the bacon strips on a baking sheet. Take a small mound of stuffing and form a little log with about 2 tablespoons. Place the mound in the center of each bacon strip. Wrap the bacon around the stuffing and close with a toothpick.
- Bake for 45 minutes, or until bacon is crispy and stuffing is browned and cooked through.
