Apple Pie Chia Seed Jam and Vegan Overnight Oat Breakfast Parfait

Happy hump day!  I’m afraid the majority of my household will be limping over the hump this week, but hey as long as we make it right?  Between Courtney who seems to have thrown out his back, Lila who won’t put any weight on her back leg, and me who is still having issues walking from the 1/4 mile of lunges we did in Sunday’s boot camp, we are quite a mess.  I hope Jim can learn to do chores!

It doesn’t help that we haven’t had a whole lot of downtime as of late, but I’m afraid that doesn’t look likely to change anytime soon.  I’m too old for this!  No really, I’m turning 28 in a couple of weeks, which for whatever reason has been the first age I’ve not been particularly excited about turning.  I only have 754 more days to accomplish everything I want to accomplish before I’m 30!  No pressure or anything.  Luckily I can cross this apple pie chia seed jam and vegan overnight oat breakfast parfait of the list, and you probably should too!  Trust me, your belly will thank you.

Apple Pie Chia Seed Jam and Vegan Overnight Oat Breakfast Parfait

Ingredients:

For the jam:

  • 3 large apples, peeled and diced
  • 3/4 cup 100% pure apple juice
  • 2 tablespoons chia seeds
  • 3/4-1 teaspoon cinnamon
  • 1/2 teaspoon pure vanilla extract
  • pinch of fine grain sea salt
  • maple syrup or agave syrup, to taste

For the parfait:

  • 1/2 cup gluten-free rolled oats
  • 1 + 1/4 cups almond milk
  • 2 tablespoons chia seeds
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon cinnamon
  • Maple syrup or agave, to taste
  • Apple Pie Jam (from above)
  • Chopped walnuts

Directions:

  1. For the jam: Add all jam ingredients into a medium pot and stir to combine. Bring mixture to a low boil. Reduce heat to medium-low, cover, and simmer for 15-20 minutes, stirring every 5 minutes or so. When the apples are fork tender, remove from heat and mash 50% of the mixture to thicken. If you want your jam a bit more smooth, you can transfer about 2/3 to a food processor and pulse a few times.
  2. For the overnight oats: Combine the oats, chia seeds, almond milk, vanilla, cinnamon and maple syrup in a small bowl.  Cover and place in the fridge overnight, or for at least 1-2 hours to thicken. Once the oats are softened and the liquid is mostly absorbed, it’s ready. You can thin it out with more milk if needed or thicken it with more chia seeds or oats.
  3. To assemble each parfait: Layer the vegan overnight oats with the apple pie jam, a few spoonfuls of each per layer.  Top with chopped nuts.
  4. Store leftover jam in an air-tight container or jar in the fridge. Should last for at least 1-2 weeks.

Serves 2 (with leftover jam!)
